Oat Bread Rolls

 30 mins prep. 2.5hrs proving. 30 mins baking
Makes 8 rolls

Ingredients

7g Yeast-Easy bake instant

230 ml Cold water

2 tsp Apple cider vinegar

2 tsp Date sugar

10g Flaxseeds ground mixed with 3tbs water.

3tbs Chickpea water (liquid from a can of chickpeas)

125g Gluten Free Oat flour*

70g Cornflour

50g Buckwheat flour

1tbs Olive oil

1.5 tsp Sea salt

20g Psyllium husk

 *you can grind oats in a blender to make oat flour

Method

 

Add water, apple cider vinegar, olive oil and flaxseeds in a bowl. Lightly whisk the chickpea water and add, whisk together.

Next, mix all the dry ingredients, oat flour, buckwheat flour, cornflour, psyllium husks, sea salt and yeast. Mix together using a wooden spoon. At first the dough will appear very wet, leave for a few minutes for the flours to soak up the liquid. Mix again until the dough becomes compact and can be worked together with hands.

Leave the dough in the bowl and  cover with plastic, leave in room temperature for 2 hours.

Heat the oven to 225°c/ 437 F /Gas mark 7

Tip the dough out onto a lightly floured(oat flour) surface. Divide into 8 equal portions. Gently shape into rolls between the palms of your hands.

Place on a tray with baking paper. Brush the rolls with olive oil and sprinkle with oat flakes. Leave under plastic (oiled) for 30 minutes in a warm place or warming draw.

Bake in the middle of the oven for 30 minutes.The bottom of each roll should sound hollow when tapped. Leave to cool on a wire rack.

Store in an airtight container. Best eaten within 24 hours, Delicious toasted too. Can also be frozen.
