No Bake Brownies

Ingredients

100g  Walnuts

170g  Almond Butter

160g  Medjool dates (pitted)

40g  Coconut sugar

40g  Raw Cacao powder

1 tsp Vanilla extract

Pinch of sea salt

 

No Bake Nut Free Brownies

Ingredients

160g Tahini (light/white)

160g Dates (pitted)

40g Coconut sugar

40g Raw Cacao powder

1 tsp Vanilla extract

Zest of one large orange

Pinch of sea salt

Method

 

In a food blender, pulse the walnuts a few times. Next add the dates, coconut sugar, sea salt, vanilla and almond butter.

Blend well by pulsing to incorporate all of the ingredients, you may need to push back down the ingredients in between pulsing with a spatula. Turn out the mixture into a large bowl and knead/bring the ‘dough’ together.

Next put the dough in between two sheets of non stick baking/parchment paper and roll out using a rolling pin and use a palate knife/knife to straighten the sides. Turn the paper clockwise as you roll.Roll out to your preferred size and thickness. We shaped a rectangle of 25cm by 20cm and made 12 brownies.

Or place a sheet of baking paper into square cake tin maximum size 20cmX 20cm. Press the dough down into the tin, distributing the dough evenly. Cut into 16 squares or less.Place in the fridge for approx 10 minutes before cutting into squares. Store in an airtight container at room temperature.

Method for the Nut Free Brownies, put all of the ingredients into a blender and pulse. Follow the rest of the instructions above.
