Raspberry Orange Sorbet

 Prep time. Approx 15 minutes plus freezing time.
Approx 4 servings

Ingredients

200g Raspberries, frozen

3 large Bananas, thinly sliced and frozen

 3tbs/25g Date sugar

1 large Orange -Zest and 40ml Juice

50ml Water

Method

Zest the orange then cut in half and juice. Into a small pan add the orange juice, water and 3 tbs of date sugar. Slowly bring up to the boil stirring frequently making sure that the date sugar dissolves.Then boil for approx.1 minute. Remove from the heat and set aside to cool.

Pour the cooled date sugar syrup into a blender. Add the frozen bananas, frozen raspberries and orange zest. Make sure that the bananas slices and raspberries are separated as much as possible and are not all frozen together before adding to the blender.

Start to pulse the blender, stopping to push down the fruit with a spatula. If will take some time to blend. Keep blending until you have a smooth ‘sorbet ‘.

If doubling up this recipe, blend the fruit with syrup in two batches for ease with blender.

You can serve immediately for a soft serve sorbet or transfer into a freezer proof container and put into the freezer for at least one hour. If left to freeze completely, remove from the freezer for approx 10-15 mins before serving.
